Spanish Chicken and Italian Sausage with Potatoes and Yellow Rice


Charlie is in Houston all week, which leaves me home alone 😦  It is sad because I won’t have my amazing partner and companion, but it gives me some quality alone time with Kikko!

This chicken is a great weeknight dish!  You basically throw it all in a pan, top with some spices, and put in the oven for an hour!  I would recommend not peeling the potatoes – mine turned out a little mushy, and I think the skin would make the texture a little better.  However, the paprika and orange zest make this chicken incredibly flavorful!  Hope you decide to try it!

YIELD: 4 servings

TIME: 1 hour 30 minutes

4 chicken drumsticks
3 Italian sausages
2-3 medium red potatoes
1 red onion
1 tsp oregano
1/2 tsp paprika
zest from 1 orange
salt and pepper
2 tsp olive oil
1 box of yellow rice

Preheat the oven to 350 F.  Season chicken with salt and pepper, and cut sausages sideways.  Cover the bottom of the baking dish with oil and put chicken and sausage on one side.  Cut potatoes in 2 inch cubes and season with salt and pepper.  Place next to meat and sprinkle orange zest on top of chicken, sausage, and potatoes.  Sprinkle everything with oregano and mix with your hands.  Slice onion and place on top and sprinkle paprika on top.

Bake for 1 hour, and cook yellow rice according to instructions on the box.  Serve chicken, sausage, and potatoes, with yellow rice.
