Carne Asada Tacos


This weekend has been glorious.  Lots of relaxing, beautiful weather outside today, and spent time with some wonderful friends.  I also cleaned my kitchen FINALLY – it was getting to the point where it was starting to bug me, so now it’s nice and sparkly clean 🙂

These steak tacos are to die for.  Flank steak with a citrusy rub = perfection.  I only let my steak marinate for 1 hour (didn’t exactly look at the recipe ahead of time, oops), so I’d consider marinating it 2 hours or longer to get a juicier steak.  But it was incredibly easy to make, and with the right tortillas and fixin’s it makes a perfect taco night dinner.  Hope you decide to try it!

YIELD: 4 servings

TIME: 5 hours

2 lbs flank steak
1/3 cup olive oil
juice from 2-3 limes
juice from 1 orange
3 Tbsp apple cider vinegar
1 tsp honey
1/2 cup chopped red onion
1/4 cup chopped cilantro
3 cloves garlic, minced
1 jalapeno, sliced
1 tsp chili powder
1 tsp ground cumin
1 tsp paprika
salt and pepper
corn tortillas
shredded cheese
pico de gallo
sliced avocados
shredded lettuce
lime wedges, for juicing
hot sauce or salsa

Mix olive oil, lime juice, orange juice, apple cider vinegar, honey, red onion, cilantro, garlic, jalapeno, chili powder, cumin, paprika, salt, and pepper in a large mixing bowl.  Place steak in a baking dish and pour marinade over the steak; cover with plastic wrap and marinate 2-5 hours in the refrigerator.  Brush the grill with olive oil and season marinated steak with salt and pepper.  Cook for 5 minutes on each side, transfer to a plate, and cover with foil.  Let rest, cut into thin strips, and serve with the last 7 ingredients.
