Blackberry Orange Muffins

I love the weekends.  After a long week or school and/or work, it’s nice to just sleep in a little bit and relax 🙂

These muffins are the absolute PERFECT weekend breakfast treat.  They have a great mix of blackberries, orange zest, and cinnamon.  One tip – I would 1 cup blackberries instead of 2 cups.  I feel like with less blackberries the muffin is well balanced with the flavors.  These are very easy to make, so there’s no reason not to try these!  🙂

YIELD: 12 muffins

TIME: 1 hour

INGREDIENTS
2 cups flour
1-1/2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
2 tsp orange zest
2 cups blackberries
1 stick butter
1 cup sugar
2 eggs
1/2 cup milk

DIRECTIONS
Preheat oven to 375 F.  Combine flour, orange zest, baking powder, salt, and cinnamon in a medium sized bowl.  Add blackberries until well mixed.  Cream butter and sugar, and add eggs one at a time.  Add milk, and gently mix in dry ingredients.  Spoon batter into buttered muffin tin and bake 25-30 minutes.  Serve warm with butter.
