Today was definitely an unexpected day. Last night, my right ear was clogged due to earwax (not allergies this time), so I decided to go see a doctor this morning. After seeing two doctors, getting poked near my eardrum, getting my ear drained, and having a suction machine pull out the wax, I can FINALLY hear again!! But it took up literally my entire morning, so very little practice done today 😦
On days like today where time is not on your side, this is a dish I would highly recommend making. Looking at the ingredients, I originally thought “Oh boy. This is gonna take forever to let the veggies marinate and cook with the pasta.” But it takes less than an hour, and you get protein, starches, and vegetables in the same dish. Miraculous.
I hope you decide to try this – the flavors with the italian sausage and broccoli rabe really make it an almost tart mixture, contrasting well with the pasta and cheese. Hope you decide to try this!
YIELD: 4 servings
TIME: 45 minutes
1/4 cup olive oil
4 sweet Italian sausages (about 1 pound), casings removed
3 cloves garlic, minced
1/4 tsp red pepper flakes
1 bunch broccoli rabe, washed, dried, and chopped
1 lb orecchiette pasta
salt and pepper, to taste
1/4 cup grated pecorino cheese
Cook sausage over heated oil until browned for 5 minutes. Stir in garlic and red pepper flakes, and cook for 1 minute. Stir in broccoli rabe and cover for 5 minutes. Cook pasta according to package directions, and drain leaving some water clinging to the noodles. Add to the broccoli rabe over low heat, toss to combine, then remove to a large serving bowl. Season with salt and pepper, to taste and sprinkle with pecorino cheese. Serve on plates or in bowls and top with extra cheese if desired.
