Now that school has started, I definitely have more of a schedule.  It’s good – I’m practicing more and getting more done, but I’m definitely a lot more tired when I come home!  I’m looking forward to doing lots of performing and lots of prep-work for auditions next year!

Hummus.  AKA the world’s best snack.  So a bit of history was made with this – Charlie does not like ethnic foods, generally.  He loves Japanese, but aside from that hates Indian, Thai, anything spicy.  Charlie loved the hummus.  I even came home and he was eating hummus and pita chips in front of football.  Wut.

This is literally the easiest thing to make ever.  And the best tasting hummus – SO creamy and delicious!  You just put ingredients in a blender, make it look pretty, and serve.  Hope you decide to try it – it’s a great appetizer if you’re having company over 🙂

YIELD: 8-10

TIME: 10 minutes

16 oz can chickpeas + liquid
juice from 1 lemon
1/3 cup tahini
1 garlic clove
3 Tbsp olive oil
fresh vegetables, cut in bite-size pieces

Combine chickpeas, lemon juice, tahini, garlic clove, and olive oil in a food processor for 1 minute.  Garnish with drizzled olive oil and serve with fresh vegetables and/or pita chips.
