Every Sunday, Charlie and I have a nice breakfast, whether we go out for brunch or I cook at home. Lately I’ve been trying to cook at home more, so Sunday breakfasts have been delicious home-cooked breakfast foods and coffee at home 🙂
These waffles are magnificent, and have a great dual purpose! If you want a rich breakfast dessert, prepare as written with the cinnamon and sugar dusted on top. For Charlie and I, it was pretty darn rich for breakfast, so I froze the waffles without the extra topping. These tasted more like a cinnamon waffle. Either way, these are phenomenal and super easy!
YIELD: 7-8 waffles
TIME: 45 minutes
1 tsp salt
4 tsp baking powder
2 Tbsp sugar
2 cups flour
1-1/2 cups warm milk
1/3 cup melted butter
1 tsp vanilla extract
3 shakes ground cinnamon (more if desired)

1/2 cup cinnamon
1/2 cup melted butter
In a large bowl, mix flour, salt, baking powder, and 2 Tbsp sugar. Combine 1 cup sugar, 1/2 cup cinnamon in a small bowl, and set melted butter in a small bowl.
Beat the eggs and stir in milk, butter, and vanilla. Pour milk mixture into the flour mixture, and fold in three shakes of cinnamon.
Spray heated waffle iron with PAM cooking spray and ladle the batter into the waffle iron. Once fully cooked, brush melted butter on each side of the waffles and dip each side into the churro mixture.
Serve immediately and serve with maple syrup and butter if desired.
