Chicken with Honey Beer Sauce

This past weekend I was gone looking at apartments in Austin….and I found one!  It’s a beautiful place: two stories, lots of natural light, hardwood floors and some carpet.  The best part is the kitchen—it is literally twice the size of my current kitchen, with about 3 times more cabinets/storage!!  I seriously cannot wait to cook in there 🙂

Austin was a great place to visit, but it is nice to be back home, with Charlie and Kikko!  I was itching to make a home-cooked meal, and found this recipe in my collection.  I predicted it would be high in calories because of the beer and honey, but this is one of the lowest calorie meals I have ever made: 210 calories per serving!  The flavors are amazing with the beer and honey—it tastes incredibly rich and full of flavor.  Hope you decide to try it!

YIELD: 5 servings

TIME: 1 hour

CALORIES: 210 per thigh

INGREDIENTS
5 chicken thighs
1 Tbsp olive oil
1/4 tsp pepper
1/4 tsp salt
1/4 tsp thyme
1/4 tsp rosemary
1 onion, chopped
2 Tbsp honey
1 bottle beer (Bell’s Oberon was what I used)
1/4 tsp parsley, chopped

DIRECTIONS
Dredge chicken with salt and pepper, and brown chicken in olive oil.  Sprinkle with thyme and rosemary, and keep chicken warm.  Saute onion for 10-12 minutes, and mix honey and beer together until honey is dissolved.  Pour into onions and simmer for 8-10 minutes, until reduced by half.  Add chicken and parsley and simmer 5-7 minutes per side.
