Cornbread

I LOVE CORNBREAD.  If it’s done right, it’s moist, flavorful, and you can use a number of types of jellies/butters to make it even more amazing.  This particular recipe hails from the Joy of Cooking, and it turned out beautifully!  I had absolutely no problems, and I finished making it in about 30-45 minutes; hope you decide to make it!

YIELD: 8-10 servings

TIME: 30-45 minutes

INGREDIENTS
Crisco or butter, for greasing
1-3/4 cups cornmeal
1 Tbsp sugar
1 tsp baking powder
1 tsp baking soda
1 tsp salt
2 large eggs
2 cups buttermilk

DIRECTIONS
Preheat oven to 450 F and grease an 8×8″ pan.  Whisk cornmeal, sugar, baking powder, baking soda, and salt in a large bowl.  Whisk the eggs in a medium bowl and mix in buttermilk.  Add wet ingredients to dry ingredients, and whisk until just blended.  Place pan in the oven for 5 minutes, and immediately pour batter into pan.  Bake 20 minutes, or until toothpick comes out clean.  Cut into squares and serve immediately.
