Snickerdoodle Blondies

Today was Charlie’s nephew’s 2nd birthday!  What a fun celebration—there must have been 30 people there, full of family and some families with newborns.  Carter (birthday boy) is such a cute little boy—full head of blonde hair and bright blue eyes.  He was full of smiles and constantly on the move!

I thought I would make a fresh fruit salad and these blondies for the cute little birthday boy!  Granted, he couldn’t eat the blondies, but they were intended for those who wanted something other than cake.  These were super easy to make, and they are incredibly fudgy texture!  Charlie said it was the best dessert I have ever made….clearly they turned out well, since they were practically all gone from a 9×13″ pan.  Not bad!

YIELD: 10-12 servings

TIME: 1 hour

INGREDIENTS
2-2/3 cups flour
2 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
2 cups packed brown sugar
1 cup butter
2 eggs
1 Tbsp vanilla extract
1/2 cup cinnamon chips
sugar and cinnamon, mixed together and set aside

DIRECTIONS
Preheat oven to 350 F and grease a 9×13″ pan.  Mix flour, baking powder, cinnamon, and salt in a small bowl.  Cream butter and brown sugar, and add eggs and vanilla until smooth.  Slowly stir in flour mixture, and mix in cinnamon chips.  Spread evenly in the prepared pan, and sprinkle cinnamon-sugar mixture on top.  Bake 25-30 minutes and cut into bars.
