Chocolate Chip Shortbread Cookies


Shortbread cookies are my absolute favorite: simple, buttery, and delicious!  The addition of chocolate chips is a really nice touch—it’s not as rich as the typical brown sugar batter chocolate chip cookies usually have.  These cookies are super addictive—they barely lasted a full evening in the house.  Perfect for an afternoon of tea and cookies, or for a late night snack 🙂

YIELD: 47 cookies

TIME: 2 hours

3 sticks butter
1 cup sugar
1 tsp vanilla extract
3-1/2 cups flour
3/4 tsp salt
12 oz mini chocolate chips (I used about half a bag, depends on how chocolatey you want the cookies)

Preheat oven to 350 F and cream butter and sugar.  Add in vanilla extract, and gently mix in flour and salt.  Fold in mini chocolate chips and roll into a log (2″ in diameter).  Cover in waxed paper and chill until firm, about 30 minutes-1 hour in the freezer, or longer in the refrigerator if you want to wait to make the cookies.  Slice into cookies, place on non-stick cookie sheets, and bake 11-13 minutes.  Let cool on cooling racks and serve immediately.
