Arugula Salad with Lemon Vinaigrette

This salad is AMAZING.  When I was a kid, I used to hate anything that wasn’t romaine or iceberg lettuce.  I just didn’t like the feeling the back of my teeth got, the overly vitamined and tart taste.  Now that I have gotten older, I suppose, I love the taste of arugula!  It does still feel icky on the back of my teeth, but the taste is something I have grown to love.

Everything is very easy to make, including the dressing….start to finish, it takes about 10 minutes.  While my shells were cooking I put the dressing in the refrigerator, that way the salad could be cold, crisp, and delicious!  Hope you decide to make this—it’s a very universal salad that should go with any main dish!

YIELD: 4 servings

TIME: 10 minutes

INGREDIENTS
arugula
Parmesan, grated
sliced cherry tomatoes
1 avocado, diced
1 cucumber, sliced and cut into quarters
1/4 cup olive oil
juice from 1 lemon
2 tsp Dijon mustard
salt and pepper, to taste
1 Tbsp sugar, or more to taste

DIRECTIONS
Whisk olive oil, lemon juice, Dijon mustard, salt, pepper and sugar together until well mixed; chill in the refrigerator until ready to mix the salad.  Combine arugula, cherry tomatoes and cucumber, and gently mix in avocado.  Toss lemon vinaigrette and sprinkle Parmesan cheese on top.
