These cookies are another cookie my mom always makes during the holiday season! I love the fact that they’re stuffed with jelly in the middle….it’s like an extra little surprise!
As you can see in the photo, these tend to turn out a little dry once baked. Try adding a little less flour or being very exact with your measurements so they don’t turn out that way. Be generous with the jelly filling, but make sure it doesn’t overflow. If you have any baby spoons, those are PERFECT for getting the jelly in there. Mmmm, these are so good….they won’t be in the house for long!
YIELD: 3 dozen or more cookies
TIME: 1 hour
2-1/4 cups flour
2/3 cup sugar
2 sticks butter, softened
2 egg yolks
1 tsp vanilla
two types of jam (I used apricot and strawberry, but use your creativity!)
Cream flour and sugar. Add egg yolks and vanilla. Sift the flour and add to the mixture. Mix until it can be made into a smooth ball. Break off small pieces and roll into small balls. Place on ungreased cookie sheets and bake 8 minutes. Remove from oven, make holes in the center, and add jam. Bake 8 minutes and let cool.
