I feel weird calling these cookies, but I suppose they are.  My mom makes these during Christmas time, and they’re just so wonderfully delicious!  Santa ate all of them up.

The chocolate hardens very quickly, so make sure to place them on the wax paper immediately—no going back.  Place them in the refrigerator and enjoy!  They’re sure to be quite the treat at any gathering!

YIELD: 50-70 buckeyes (depending on how big you make them)

TIME: 2-3 hours

INGREDIENTS
1 lb peanut butter
1/2 lb butter
3 cups confectioner’s sugar
6 oz semisweet chocolate
2/3 paraffin wax (I usually use Gulf Wax)

DIRECTIONS
Mix peanut butter, butter, and confectioner’s sugar.  Make into balls and refrigerate 1 hour or longer.  Heat the chocolate and paraffin wax and dip the balls in with a toothpick in the center or holding it with your fingers.  Place on wax paper and refrigerate.
