The thing I love about this prepared broccoli is how easy it is to combine this with any entree! And oh yeah, it’s super addictive. At our dinner party last night, everyone kept on taking little helpings of the broccoli!
When I made the broccoli, I added some of the parmesan cheese before I stuck it in the oven, so you get little parmesan crisps along with the broccoli. I didn’t cook it as long, maybe 5-10 minutes, and I mixed around the broccoli a few times throughout, so the parmesan crisps moved around…and my smoke alarm didn’t go off, haha.
YIELD: 4-5 servings
TIME: 20-40 minutes (depending on how cooked you want the broccoli)
4 lbs broccoli
7 Tbsp olive oil
salt and pepper
4 cloves garlic, diced finely
1/3 cup parmesan cheese, shredded
juice from 1/2 lemon
Preheat the oven to 450 F. Cut the broccoli into florets. Place broccoli on a nonstick cookie sheet and toss with 5 tablespoons of olive oil, salt and pepper (to taste), garlic, lemon juice, and a little bit of the parmesan cheese. Roast for 10-20 minutes. Once out of the oven, sprinkle extra parmesan cheese on top and serve immediately.
