I made these back in college with my friend, Julia. We were staying at her sorority, and I swear, these took forever to make. But was it ever worth it! Afterwards, we had some and watched The Ugly Truth…man, that was a great night 🙂
Like I said earlier, these just take forever in the oven and are very time consuming. But once they’re done, they’re light, delicious, and perfect for a sweet little snack!
YIELD: 24 small meringues
TIME: 4 hours
3 egg whites
pinch of salt
1/2 cup granulated sugar
1 vanilla bean, scraped seeds only
1 teaspoon ground cinnamon
1/2 cup confectioner’s sugar
1/2 cup dark chocolate, coarsely chopped
Preheat oven to 250°F; line two large baking sheets with baking paper.
Whisk egg whites and a pinch of salt in an electric mixer until soft peaks form (4-5 minutes), add granulated sugar in a thin steady stream, whisking continuously until stiff and glossy, then whisk in vanilla seeds and cinnamon. Fold in icing sugar, then chocolate and spoon mixture into small mounds on prepared cookie sheets with the parchment paper. Bake until dry and lightly colored. Turn off oven, cool in oven for 1 hour, then transfer to a wire rack, dust with cocoa and serve.
