Oatmeal Raisin Cookies

Sometimes I have huge cravings for these cookies.  I’ll be doing work or reading, and I’ll think to myself: OH MY GOD.  I need an oatmeal raisin cookie RIGHT NOW.  So I’ll just stop what I’m doing and make them….luckily this recipe is so easy and quick to make!

The only time-consuming element is that you have to let the dough chill for a little bit, so the cookies can hold their texture.  Otherwise, the cookies come out all goopy and not so cute.

YIELD: 24 cookies

TIME: 1 hour

1 stick butter
2/3 cup brown sugar, packed
1 egg
1/2 tsp vanilla extract
3/4 cup flour
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1-1/2 cups oats
3/4 cup raisins

Preheat oven to 350 F and cream butter, sugar, egg, and vanilla.  Whisk flour, baking soda, cinnamon, and salt together in another bowl, and add to butter mixture.  Fold in oats and raisins, and chill dough for 30 minutes in the refrigerator.  Drop by spoonfuls on non-stick cookie sheets, and bake 10-12 minutes.  Let cool and serve with a cold glass of milk.
